SimBIOsi is all about organic. Ecologically friendly foods cooked well and served in casual chic surroundings in busy city thoroughfare via dei Ginori.

Open all day from 11am to 11pm, hungry diners can make good on their craving for a midday margherita or spicy salami, or opt for more adventurous toppings like tuna, buffalo mozzarella and rocket.

What makes the pizza so special at SimBIOsi is the use of stone-ground wholemeal in the dough, with flour sourced from Tuscany’s La Ginestra farm near San Casciano in Val di Pesa, Molino Quaglia near the northeastern Italian city of Padua and Antico Molino Rosso close to Verona. Plus there’s the long leavening time, which yields a base that’s a pleasure to eat and a joy to digest.

Wash down your dough delight with the pick of Italy’s wine and beer scene. Check out the local natural wines from small producers like Fattoria San Michele a Torri in Scandicci and beers from the likes of La Petrognola near Lucca.

If you’re not in the mood for pizza, graze on delicious platters of cured meats and cheeses handpicked from Tuscan butchers Macelleria Parti in San Donato in Chianti and Fattoria di Camporbiano located between Gambassi Terme and San Gimignano.
