For the afficionado or the career barista, schooling in what makes a ‘good’ espresso coffee is now available in Florence. The Jolly Caffè in Grassina and the Mokarico Caffè in Borgo San Lorenzo offer certified courses, with instructors from the International Institution of Coffee Sommeliers, to delve into the colors, aromas, consistency, taste and aftertaste of espresso coffee. With the goal of promoting the ‘true’ culture and high quality of Italy’s espresso coffee, courses for the coffee connoisseur result in a certificate alla sommelier, attesting to the student’s expertise on java.
