Open for lunch and dinner, indulge in a midday homemade pasta dish made in the open kitchen, the heart and soul of SimBIOsi organic pasta and lovely wine. There’s an element of theatre, as diners can see the rustic tiled kitchen from every corner of the restaurants, aromas whetting your appetite, pasta machine doing its business and chefs chatting as they cook.

 

Donato and Sofia’s newest opening next door to their popular pizzeria, which was inaugurated in 2015, shows a continuation of their commitment to some of the best tasting, seasonal and ethical food in Florence. At SimBIOsi organic pasta and lovely wine, all the ingredients proudly bear the “allevamento etico” (ethical, cruelty-free farming) hallmark of quality, which guarantees respect for animals in the farming processes. What makes the pasta so special is the use of selected lightly semi-wholemeal flours, sourced from some of Italy’s top farms and stone-grinding mills.

 

Tickle your taste buds with authentic antipasti: broccoli flan with a faggeta cheese and mint fondue, grilled tomino cheese with the freshest of mushrooms or a cheese platter with pickled vegetables and jams. Be spoilt for choice with the delicious pasta courses: opt for radicchio and artisan-made gorgonzola lasagne, tagliatelle with vegetable ragù or macaroni with basil pesto, pistachios and pecorino shavings. If you still have room, top up your tum with chickpea burgers and roast potatoes.
