Coffee fiends will go wild for Fluid Specialty Coffee & Sharing in borgo La Croce. The innovative coffee shop is the new kid on the block from Le Piantagioni del Caffè, the renowned Livorno-based roasting company devoted to specialty and premium quality coffee, and IDEA Food & Beverage, the Milan-centric strategic marketing consulting company.

Fluid Specialty Coffee & Sharing is a place of inclusivity and openness that aims to initiate curious people into the world of specialty coffees with a laid-back and friendly attitude.

Expect an all-day menu with a relaxed mindset that’s welcoming for remote working and studying. Modbar coffee machines by La Marzocco are incorporated into the seven-metre-long counter to encourage customers to treat the counter as if they were at a diner. In doing so, the barista educates customers and tell them about the characteristics of the different coffees served, the flavours, production and brewing methods.

I popped by one Friday morning and ordered a one-mug V60 (4 euro), drawn to the bar as opposed to the very international takeout option or the trendy tables surrounded by fun and upbeat décor, such as neon signage and pendant lamps in primary colours. Professional and friendly barista Davide Cesati explained the different blends before I chose the 100 per cent Arabica Ulya from Papua New Guinea with tropical fruit overtones, which was ground in a Mahlkönig EK43S. All the while, my eye was drawn to the Poursteady machine that’s positioned in the middle of the bar to encourage customers to brew coffee on their own in an original and engaging experience. Mid-sip, conversation flows about coffee and life in general with Paolo Innocenti, barista and after-sales guy for Le Piantagioni del Caffè, as well as two regular brew-loving customers: the best start to the day.

“Inclusion is a crucial factor if you want to bring premium quality to as many cups as possible,” comments Prunella Meschini, research and development manager at Le Piantagioni Caffè and president of Specialty People SRL, the company created by Le Piantagioni del Caffè and IDEA. “We’ve chosen to be disruptors in all our choices and we strongly believe that the success of the project is based on the serenity of our team, who can then engage customers with passion and dedication and feel like this project is also their project.”
