Try the Spicy-Tonic (Ginarte, Tonica Rovere Sanpellegrino, jalapeño pepper) with steak tartare, turnip tops, truffle and chives; Grape & Basil (grappa, basil liqueur, lime, foamer) paired with truffled arancini and Lodigiano cheese; and the floral Art-Rose (Ginarte, rose elixir, granadine, lime, sugar, foamer) matched with tonnato vitello, whereby the tuna is seared in a sesame crust alongside a veal sauce.
