The following is from Ely, barman of Eby’s Latin Bar. Eby’s is specialised in Latin cuisine, fresh fruit drinks and other cocktails.

The most popular cocktail at Eby’s Latin Bar is the Pineapple Daiquiri.

It’s a vitamin-filled cocktail, made with high quality fresh fruit and renowned South American rum. The use of fresh fruit is the real secret behind all of Eby’s delicious, easy-to-drink cocktails.

Ingredients:

100 grams of pineapple pulp

½ a squeezed lemon

½ squeezed orange

1 teaspoon brown sugar

1 teaspoon granulated sugar

50 ml dry rum

2 cubes of crushed ice

Prepare ingredients and place them in the blender all at once. Blend to a creamy smooth consistency. Pour into a flared glass and garnish with poppy seeds. Pineapple Daiquiri should be served with spicy fried appetisers, typical of Latin-American cuisine.
