The Unicoop supermarket chain in Florence has decided to make their line of traditional Tuscan cold cuts official. The numerous products that are grown and produced using customary local methods will now have a specific seal on their packaging in order to make them easily recognisable to customers. Some of the more popular salumi, or cold cuts, that will be in this category are Finocchiona, a meat made of various cuts of pork and fennel seeds, and Rigatino, a fatty pork cut that is equivalent to Pancetta.

 

These meats must follow a certain curing process guideline. As well, they must also originate from locally raised livestock. Tuscany is especially well known for two types of animals: the Chianina cattle and the Cinta Senese pigs.
