The pizza-making tradition still has a strong hold in Naples but it seems to be slipping in Italy’s biggest cities. According to a recent survey conducted by the Milan chamber of commerce, there are 119 Egyptian-run and owned pizzerias in Milan, compared to 31 run by natives of the Campania region and 10 run by Neapolitans. In Rome, approximately 18 percent of pizza-makers are Egyptian. However, the survey reveals that all pizzerias in Naples are still owned and operated by locals.
