The restaurant’s chef, Carlo Cioni, uses recipes ofhis mother, Delfina, to create his tasty dishes. He uses local ingredients toproduce gastronomic delights, authentic and traditional Tuscan dishes. The menuis so mouth-wateringly good that I hesitate to suggest only these few menuoptions. Try the fresh fennel salami; the zucchini salad with pine nuts; thepasticcio made with nettles, pasta herbs, a white sauce, topped with porkcubes, cooked on a spit. The red wines from Carmignano are superb—be sure totry one.
