As an expat residing in Florence, I have been fortunate to immerse myself in the vibrant tapestry of Italian culture, from its artistic heritage and historical riches to culinary traditions. Walking through the city’s markets, one cannot help but notice all the seasonal produce. A typical Tuscan salad epitomizes the simple beauty of local ingredients, while a drizzle of extra-virgin olive oil and a splash of balsamic vinegar create flavors that nourish body and soul.

Founded by Vincenzo Martoccia and Giancarlo Cosentino, two Florentines with a passion for clean eating, the eatery has rapidly become a fixture in the city. “We realized that Florence was ready for a change, a shift towards more vibrant and nutritious choices,” explains Vincenzo. “Opening Rosalia Salad Gourmet was our way of encouraging people to embrace these health-conscious choices in a delicious manner. With our three locations in via dei Servi, piazza G. Spadolini and via Faenza, we aim to provide a welcoming environment where individuals can indulge in the goodness of fresh ingredients.”

Using ingredients that are in season during the colder months, Rosalia’s old-style winter salad bursts with flavor and nutrition. Crisp greens provide a refreshing base, while the hearty texture of the grains add a satisfying depth. The burst of sweetness from cherry tomatoes and corn complements the savory notes of tender roasted turkey. What elevates this salad is the hummus dressing with a delightful fusion of earthy, nutty and zesty notes.

Old-style winter salad with hummus dressing

For the salad

2 cups romaine lettuce, washed and chopped

1 cup valerian salad, washed

2 tablespoons chia seeds

1 cup cherry tomatoes

1/2 cup red onions, thinly sliced

1/2 cup corn kernels

1/2 cup spelt, cooked

1 cup roasted turkey breast, shredded

1/2 cup Greek feta cheese, crumbled

In a large salad bowl, combine the romaine lettuce, valerian salad, chia seeds, cherry tomatoes, red onions, corn, spelt, shredded roasted turkey and crumbled feta cheese.

For the hummus dressing

1 cup chickpeas, cooked and drained

3 tbsp tahini

2 cloves garlic, minced

1/4 cup olive oil

Salt and pepper to taste

Juice of 1 lemon

In a blender or food processor, combine the chickpeas, tahini, minced garlic, olive oil, salt, pepper and lemon juice. Blend until smooth, adding water if needed to achieve your desired consistency.

Drizzle the hummus dressing over the salad ingredients and toss the salad gently to ensure all ingredients are well coated with the dressing.
