Old-style winter salad with hummus dressing
For the salad
2 cups romaine lettuce, washed and chopped
1 cup valerian salad, washed
2 tablespoons chia seeds
1 cup cherry tomatoes
1/2 cup red onions, thinly sliced
1/2 cup corn kernels
1/2 cup spelt, cooked
1 cup roasted turkey breast, shredded
1/2 cup Greek feta cheese, crumbled
In a large salad bowl, combine the romaine lettuce, valerian salad, chia seeds, cherry tomatoes, red onions, corn, spelt, shredded roasted turkey and crumbled feta cheese.
For the hummus dressing
1 cup chickpeas, cooked and drained
3 tbsp tahini
2 cloves garlic, minced
1/4 cup olive oil
Salt and pepper to taste
Juice of 1 lemon
In a blender or food processor, combine the chickpeas, tahini, minced garlic, olive oil, salt, pepper and lemon juice. Blend until smooth, adding water if needed to achieve your desired consistency.
Drizzle the hummus dressing over the salad ingredients and toss the salad gently to ensure all ingredients are well coated with the dressing.
