Castello di Casole, the luxury Belmond estate nestled halfway between Florence and Siena, has unveiled a new culinary initiative for 2026: the Territori menu.

Daniele Sera and Norbert Niederkofler

Crafted in collaboration with three Michelin-star chef Norbert Niederkofler of Atelier Moessmer (Brunico, South Tyrol), celebrated for his ethical, nature-centred approach to cuisine, the menu reimagines Tuscan classics through a contemporary lens.

The inaugural Territori menu blends the vision of resident executive chef Daniele Sera with Niederkofler’s Alpine-inspired ethos. Traditional Tuscan dishes such as ribollita, rabbit and pane e olio are transformed into inventive creations that celebrate both terroirs, bridging the rolling Tuscan hills with the dramatic landscapes of the Dolomites. The collaboration turns each dish into a dialogue between region, culture and seasonality, making the dinner a conversation as much as a tasting.

Territori is conceived as more than a menu; it is a culinary platform with ambitions to grow into an annual event. Each edition will pair Tuscany with a different gastronomic ecosystem, creating a narrative that evolves with the seasons. The project seeks to serve as a living culinary manifesto, where the dialogue between regions becomes an opportunity to reflect on ingredients, techniques and sustainability.
