For the climactic moment there is a hay-smoked pigeon breast lusciously accompanied by beetroot and fermented blueberries.

Of course, the wine will also flow, like poetry. Each glass having been carefully chosen, the trusted in-house sommelier to complement and highlight the artisanal brilliance of each dish.
